Uji 1 Top Ceremonial Matcha | 30g
Uji 1 is our top ceremonial grade and the only product in our range. The leaves are harvested in Uji and then processed and packed at Milli Ens's Hangzhou facility in China.
Uji is one of the most historically established matcha-producing regions in the world, with a cultivation tradition extending back several centuries. The terroir, shade-growing conditions, and harvest timing in Uji produce leaves with a distinctive depth of flavour that experienced matcha drinkers recognise clearly.
What to expect
This is the smoothest, most complex matcha in our range. The natural sweetness from the high L-theanine content is immediately apparent when drunk plain. The bitterness is minimal. The colour is a vivid, deep jade green. The umami depth is more pronounced than in our 6A Hangzhou ceremonial grade, with a longer, cleaner finish.
This grade is specifically for drinking plain, whisked with water only. Using it in a latte works but wastes what makes it distinctive. If you want to experience what high quality matcha actually tastes like at its best, this is the right choice.

Ingredients
100% matcha (Camellia sinensis leaf powder). No additives, no sugar, no flavourings.
How to prepare
Sift one teaspoon into a wide ceramic bowl. Add 60 ml of warm water at exactly 70 to 75 degrees Celsius. Whisk in a W motion for 20 to 30 seconds until a fine, persistent foam forms on the surface. Drink immediately from the bowl.
Temperature is critical with this grade. Water above 80 degrees destroys the natural sweetness and produces bitterness. Use a thermometer or let boiled water rest for at least three minutes before using.
Storage
Keep sealed in an airtight container away from light and heat. Refrigerate after opening. Let the sealed tin reach room temperature before opening to prevent condensation forming on the powder. Best within 4 to 6 weeks of opening.
