Recipe 1: Classic Hot Matcha Latte

Ingredients

*      1 teaspoon (2g) matcha powder - 5A Premium recommended

*      2 tablespoons hot water at 80 degrees Celsius

*      200ml milk - dairy or any plant-based milk

*      Honey or sugar to taste

Method

1.    Sift matcha powder into a cup or small bowl to remove lumps

2.    Add the hot water and whisk briskly until smooth and frothy

3.    Heat your milk to your preferred temperature

4.    Pour the warm milk over the matcha paste

5.    Sweeten to taste and serve immediately

NOTE  Do not use boiling water. Water at 80 degrees gives the best flavour. Boiling water makes matcha taste bitter.

Recipe 2: Iced Matcha Latte - Perfect for Bangladesh's Summer

Ingredients

*      1 teaspoon matcha powder

*      2 tablespoons hot water

*      200ml cold milk

*      Ice cubes

*      Honey or sugar to taste

Method

6.    Whisk matcha with hot water until completely smooth

7.    Fill a glass with ice cubes

8.    Pour cold milk over the ice

9.    Pour the matcha paste over the milk

10.  Stir gently, sweeten to taste, and serve

TIP  Tip: Mix honey into the matcha paste before adding cold milk. It dissolves more easily in warm liquid.

Recipe 3: Matcha Frappe

Ingredients

*      1 teaspoon matcha powder

*      200ml milk

*      1 scoop vanilla ice cream

*      A handful of ice

*      1 tablespoon honey

Method

11.  Add all ingredients to a blender

12.  Blend on high for 30 to 45 seconds until smooth and frothy

13.  Pour into a tall glass and serve immediately

Recipe 4: Matcha Lemonade

Ingredients

*      1 teaspoon matcha powder

*      200ml cold water

*      Juice of half a lemon

*      2 teaspoons honey or sugar

*      Ice cubes

Method

14.  Whisk matcha with 2 tablespoons of hot water until smooth

15.  Add cold water, lemon juice, and sweetener

16.  Stir well, add ice, and serve cold

Recipe 5: Matcha Milkshake

Ingredients

*      1.5 teaspoons matcha powder

*      2 scoops vanilla ice cream

*      150ml milk

*      1 tablespoon honey

Method

17.  Blend all ingredients until completely smooth

18.  Taste and adjust sweetness

19.  Serve immediately in a chilled glass

Recipe 6: No-Bake Matcha Cheesecake

Ingredients - serves 6

*      200g digestive biscuits, crushed

*      80g butter, melted

*      250g cream cheese at room temperature

*      100ml whipping cream

*      3 teaspoons matcha powder - 3A Culinary Grade

*      80g icing sugar

Method

20.  Mix crushed biscuits with melted butter and press firmly into the base of a 20cm tin. Refrigerate for 30 minutes.

21.  Beat cream cheese until completely smooth

22.  Sift in matcha powder and icing sugar, mix until fully combined

23.  Whip cream to soft peaks and gently fold into the cream cheese mixture

24.  Pour over the biscuit base and refrigerate for at least 4 hours or overnight

25.  Slice and serve. Dust with extra matcha powder for presentation.

Recipe 7: Matcha Cookies

Ingredients - makes 20 cookies

*      200g plain flour

*      2 teaspoons matcha powder

*      100g unsalted butter

*      80g caster sugar

*      1 egg

*      Half teaspoon vanilla extract

Method

26.  Beat butter and sugar together until light and fluffy

27.  Beat in the egg and vanilla extract

28.  Sift in flour and matcha powder, mix to form a soft dough

29.  Roll into small balls and flatten slightly on a lined baking tray

30.  Bake at 170 degrees Celsius for 12 to 15 minutes

31.  Cool on a wire rack before eating

Recipe 8: Matcha Overnight Oats

Ingredients

*      80g rolled oats

*      200ml milk or plant-based milk

*      1 teaspoon matcha powder

*      1 tablespoon honey

*      Toppings: banana, berries, or nuts

Method

32.  Combine oats, milk, matcha, and honey in a jar or container

33.  Stir thoroughly until matcha is fully dissolved into the milk

34.  Cover and refrigerate overnight

35.  Add toppings in the morning and enjoy cold

Which Matcha Grade to Use for Each Recipe

Use 5A Premium Matcha (Tk 699) for all drinks where matcha flavour is prominent: lattes, iced matcha, and frappes. Use 3A Organic Culinary Grade (Tk 399) for baking and cooking where matcha is mixed with other ingredients.
