Matcha Cookies Recipe: How to Make Crispy Japanese Green Tea Biscuits at Home

Matcha cookies are one of the simplest and most satisfying matcha baked goods you can make at home. They require only a handful of ingredients, take about 30 minutes from start to finish, and produce a beautifully green, crispy shortbread-style biscuit that keeps well for up to a week. Perfect for Eid gifts, afternoon tea, or just because. This recipe uses 3A Organic Culinary Grade Matcha from Matcha.bd.

Classic Matcha Shortbread Cookies

Step-by-Step Method

1.    Line two baking trays with parchment paper. Preheat oven to 170 degrees Celsius.

2.    Sift flour and matcha powder together in a bowl and set aside.

3.    Beat the softened butter and sugar in a large bowl until light and fluffy, about 2 to 3 minutes.

4.    Add the egg yolk, vanilla extract, and salt. Beat until well combined.

5.    Add the sifted flour and matcha mixture. Mix until a soft, smooth dough forms. Do not overwork the dough.

6.    If the dough is too soft to handle, refrigerate for 15 minutes.

7.    Roll the dough into small balls (approximately 15g each) and place on the prepared trays, leaving space between each.

8.    Flatten each ball gently with the bottom of a glass or your palm to about 5mm thickness.

9.    Bake for 12 to 15 minutes until the edges are just set. The cookies will look slightly underdone but will firm up as they cool.

10.  Allow to cool on the tray for 5 minutes, then transfer to a wire rack to cool completely.


TIP:  Do not overbake. Matcha cookies baked too long lose their vibrant green colour and develop a dull, brownish tint.

Matcha White Chocolate Cookies

For a slightly more indulgent version, add white chocolate chips to the dough. The sweetness of white chocolate pairs exceptionally well with the earthy depth of matcha.

*      Add 80g of white chocolate chips after mixing in the flour

*      Fold gently until evenly distributed

*      Proceed with the same baking method

 

How to Store Matcha Cookies

*      Store in an airtight container at room temperature for up to 5 to 7 days

*      For longer storage, place in a sealed container in the refrigerator for up to 2 weeks

*      Cookies can also be frozen before baking: freeze shaped dough balls on a tray, then transfer to a bag. Bake from frozen, adding 3 to 4 minutes to the baking time
