Method
1. Combine crushed biscuits and melted butter. Mix until all biscuits are coated. Press firmly into the base of a 20cm springform tin. Refrigerate for 30 minutes to set.
2. Beat cream cheese until completely smooth with no lumps.
3. Sift in matcha powder and icing sugar. Add vanilla extract. Mix until fully combined and evenly green.
4. In a separate bowl, whip the cream to soft peaks. Fold carefully into the matcha cream cheese mixture in two additions.
5. Pour the filling over the biscuit base. Smooth the top with a spatula.
6. Refrigerate for at least 4 hours. Overnight gives the best set and the most striking colour.
7. Before serving, dust generously with matcha powder through a fine sieve for a clean, café-style presentation.
TIP: For the cleanest slices, dip your knife in hot water and wipe it clean between each cut.
Recipe 2: Baked Matcha Cheesecake
A baked cheesecake has a firmer, denser texture and a more intense flavour. It requires an oven and slightly more skill, but the result is exceptional.

8. Preheat oven to 160 degrees Celsius. Line a springform tin with parchment and wrap the outside tightly with foil.
9. Mix biscuit crumbs and butter. Press into the tin base. Bake for 10 minutes. Remove and cool.
10. Beat cream cheese and sugar until smooth. Add eggs one at a time.
11. Add sour cream, sifted matcha, and vanilla. Mix until evenly combined.
12. Pour filling onto the cooled base. Place the tin in a deep roasting pan and pour hot water into the pan to halfway up the sides of the tin (water bath method).
13. Bake for 40 to 45 minutes until the edges are set but the centre still has a slight wobble.
14. Turn off the oven, prop the door slightly open, and let the cheesecake cool inside for 1 hour. Refrigerate for at least 4 hours.
