Matcha Cake Recipe: How to Make a Soft Japanese Green Tea Sponge at Home

Recipe 1: Classic Matcha Sponge Cake

Method

1.    Preheat oven to 180 degrees Celsius. Grease and line a 20cm round tin.

2.    Sift flour, matcha powder, baking powder, and salt together in a bowl. Set aside.

3.    In a large bowl, beat butter and sugar with an electric mixer until pale and fluffy, about 3 to 4 minutes.

4.    Add eggs one at a time, beating well after each addition. Scrape down the sides of the bowl between additions.

5.    Fold in the flour mixture alternating with the milk. Start and end with flour. Mix until just combined, do not overmix.

6.    Pour batter into the prepared tin and smooth the top.

7.    Bake for 25 to 30 minutes until a skewer inserted into the centre comes out clean.

8.    Cool in the tin for 10 minutes, then turn out onto a wire rack to cool completely before frosting.

 

TIP:  Sift the matcha powder with the flour to ensure an even green colour throughout the cake. Unsifted matcha can create green specks or patches.

 

Cream Cheese Frosting for Matcha Cake

A simple cream cheese frosting pairs beautifully with matcha cake. The slight tanginess of the cream cheese balances the earthy depth of the matcha.

9.    Beat cream cheese until smooth and lump-free.

10.  Add icing sugar gradually and beat until fully incorporated.

11.  Add cream and vanilla. Beat until light and spreadable.

12.  Spread onto the completely cooled cake. Dust with extra matcha powder to finish.

 

Recipe 2: No-Bake Matcha Cheesecake

No oven needed. This version is set in the refrigerator and is just as impressive as the baked version.

13.  Mix crushed biscuits with melted butter. Press firmly into a 20cm tin base. Refrigerate 30 minutes.

14.  Beat cream cheese until completely smooth.

15.  Sift in matcha and icing sugar. Mix until evenly combined.

16.  Whip cream to soft peaks and fold into the cream cheese mixture.

17.  Pour onto the biscuit base and refrigerate for at least 4 hours or overnight.

18.  Dust generously with matcha powder before serving.

 

Tips for the Best Matcha Cake

*      Always use culinary grade matcha for baking. Ceremonial grade is too expensive and its subtle flavour is lost during baking.

*      Do not overmix the batter once the flour is added. Overmixing develops gluten and results in a tough, dense cake.

*      The cake will look slightly underdone in the centre when you pull it from the oven. This is normal: it will firm up as it cools.

*      For a more intense green colour, increase matcha to 3 tablespoons. This will also intensify the flavour.
