A matcha cake is one of the most visually impressive baked goods you can make at home. The vibrant green colour, the gentle earthy sweetness, and the moist, delicate crumb make it ideal for birthdays, Eid celebrations, or any occasion where you want to impress. This guide gives you a simple sponge recipe plus a no-bake cheesecake version, both using 3A Organic Culinary Grade Matcha from Matcha.bd.
INFO: Best grade for cakes: 3A Organic Culinary Grade (Tk 399). The robust flavour holds up well during baking and gives a vibrant green colour.
Recipe 1: Classic Matcha Sponge Cake
TIP: Bake time: 30 minutes. Serves: 8. Difficulty: beginner.

Ingredient |
Amount |
|
Plain flour |
200g |
|
Matcha powder (3A grade) |
2 tablespoons (12g) |
|
Caster sugar |
180g |
|
Unsalted butter, softened |
150g |
|
Eggs |
3 large |
|
Baking powder |
1 teaspoon |
|
Milk |
4 tablespoons |
|
Pinch of salt |
1 pinch |
Method
1. Preheat oven to 180 degrees Celsius. Grease and line a 20cm round tin.
2. Sift flour, matcha powder, baking powder, and salt together in a bowl. Set aside.
3. In a large bowl, beat butter and sugar with an electric mixer until pale and fluffy, about 3 to 4 minutes.
4. Add eggs one at a time, beating well after each addition. Scrape down the sides of the bowl between additions.
5. Fold in the flour mixture alternating with the milk. Start and end with flour. Mix until just combined, do not overmix.
6. Pour batter into the prepared tin and smooth the top.
7. Bake for 25 to 30 minutes until a skewer inserted into the centre comes out clean.
8. Cool in the tin for 10 minutes, then turn out onto a wire rack to cool completely before frosting.
TIP: Sift the matcha powder with the flour to ensure an even green colour throughout the cake. Unsifted matcha can create green specks or patches.

Tips for the Best Matcha Cake
* Always use culinary grade matcha for baking. Ceremonial grade is too expensive and its subtle flavour is lost during baking.
* Do not overmix the batter once the flour is added. Overmixing develops gluten and results in a tough, dense cake.
* The cake will look slightly underdone in the centre when you pull it from the oven. This is normal: it will firm up as it cools.
* For a more intense green colour, increase matcha to 3 tablespoons. This will also intensify the flavour.
Frequently Asked Questions:
What is the best matcha powder for baking a cake in Bangladesh?
Our 3A Organic Culinary Grade Matcha (Tk 399 for 30g) is ideal for baking. Its robust flavour holds up during baking and its price makes it practical for regular use. One 30g pack provides enough for approximately 2 to 3 standard cake recipes.
Why is my matcha cake not green?
This usually happens when the matcha powder is old or of low grade. Fresh, high-quality matcha produces a vibrant green colour. Check that your matcha is stored in an airtight container away from light. Also, sifting the matcha with the flour ensures even colour distribution.
Can I make matcha cake without an oven?
Yes. The no-bake matcha cheesecake recipe above requires only a refrigerator and produces an equally impressive result.
