What Determines a Matcha Grade

Matcha grading is based on several key factors that are assessed during production:

*      Harvest time: first-flush spring harvest leaves are highest quality. Later harvests produce lower grades

*      Leaf position: youngest leaves at the tip of the plant are graded highest. Older leaves lower down produce lower grades

*      Shading duration: longer, more carefully managed shading produces more L-Theanine and more vivid green colour

*      Processing precision: hand-picked leaves processed immediately produce better quality than machine-harvested batches

*      Stone grinding quality: slow granite stone grinding preserves more nutrients and produces a finer, silkier powder

Why ceremonial matcha is not recommended for lattes
